The real name for brain freeze is ‘sphenopalatine ganglioneuralgia’. 

The pain receptors in the mouth signal the brain, however the same nerves are also in the forehead. 

The brain mixes up the source location of the pain and thus you get the resulting headache.

Scientifically, this is caused by having something very cold touch the roof of the mouth, and is believed to result from a nerve response causing rapid constriction and swelling of blood vessels.
